Course Description
This course will explain how to perform a nutritional analysis in the context of a global understanding of different diet trends and philosophies and in accordance with the subject’s needs. More specifically, the course will help you:
Know and understand the digestive system and its physiopathology (gastric reflux, stomach hyperacidity and stomach ulcers, achlorhydria, indigestion [lack of enzymes], inflammatory and functional bowel diseases, dysbiosis-candidiasis, intestinal permeability and its consequences);
Know and understand the different nutritional trends, for example, vegetarianism, raw foods and living foods, macrobiotic diets, Shelton and food combining, Kousmine, Seignalet and Wolcott;
Know and understand the methods for calculating energy needs and expenditures through a food diary and also for calculating lean mass and physical activity levels;
Know and understand the calculation of basic nutrient values (proteins, carbohydrates, lipids, calcium, iodine, iron, magnesium, phosphorous, zinc, vitamins A, B9,12 C, D, E).
