Metabolism and Nutrition [Course 343]

This course will explain how to perform a nutritional analysis through a global understanding of different dietary philosophies and in consideration of the patient’s needs. More specifically, the course aims to provide students with an understanding of the digestive system and its pathophysiology. It also reviews the main principles of different schools of dietary thought: vegetarianism, raw foods and living foods, macrobiotic diets, Shelton's principles of food combining, the Kousmine diet, the Seignalet diet and the Wolcott approach. It gives a detailed outline of the foundations and benefits of living food. On a practical level, it explains methods for calculating needs, energy expenditures and values in terms of basic nutrients (proteins, carbohydrates, fats, minerals, vitamins).
